I recently came up with a little pasta dish I really like to have for lunch. I often don't get to have lunch until about 2-3:00 P.M. because I'm too busy with the kids.
Take today for instance- At lunch time I was feeding the kids and cleaning up spills and such. Baby Z was crawling around and crying at everything until snot ran down his face. I put him on my back in a carrier while I finished doing the lunch thing with the kids, switched out and folded some laundry, and got the kids to clean up their school stuff. (I totally yelled at them after asking 5 times. Boo.) Then I had to read to Mr. Car Man and get him down for a nap while simultaneously feeding Baby Z and getting him down for a nap. Then I had to get the bread out of the oven and finish cleaning up the lunch mess. Then more laundry to fold and switch over. Then a general pick up of the main area of the house (the leftovers the kids didn't pick up since I was tired of stepping over the same toys for 2 days.) Then I answered the door and had a package to open- new math books for the girls. They were actually excited! We got done looking at that and I realized Mr. Car Man wasn't asleep so I gave in and let all the kids sit and stare at a dumb video on TV for a while so I could have a few minutes of peace. Then I sewed a button on a shirt that had fallen off in the wash. Finally I got to stop and fix my own lunch!
Here's what I've been fixing for myself lately:
Zucchini, Mushroom and Tomato Pasta
2-4 T butter or oil of some sort (I use some butter and olive oil)
1 small or 1/2 a medium zucchini, diced
1/2-3/4 c mushrooms chopped
2 cloves garlic minced
1 small tomato diced (I used a roma)
3/4-1 c small pasta cooked and drained
salt and pepper to taste
parmesan cheese to sprinkle on top
Heat a pan on med. high heat, add butter or oil. Saute zucchini and mushrooms until tender and lightly browned. Add garlic and saute until soft and fragrant- about 1 min. Add diced tomato and heat through. Season with salt and pepper. Remove from heat and mix in the cooked pasta. Sprinkle with parmesan cheese and ENJOY!
I'm sure this recipe is nothing new or thrilling, but it was something I'd never had before and I just haven't happened on a recipe like this before. I thought it turned out really yummy and it's a good way to eat up some veggies.
I like to cut up enough veggies to make this 2 or 3 times and I cook enough pasta for that much as well. I keep the extras in the fridge and just pull some out and heat everything up. Even when making the whole thing from scratch it doesn't take too long.
I've been thinking of trying out some quinoa pasta I found at the store the other day. Hopefully it's yummy.
